Just checking in for a quick ‘Hi’ and feeling extremely full after a big bowl of healthy tomato soup. I think this is probably the best tomato soup recipe I’ve come across.
Thank you to my friend Jenny … because she arrived for a simple curry evening at the weekend armed with a huge bag of fresh cherry tomatoes which needed eating in a hurry.
No amount of sauteed tomatoes on toast would do them justice, so I started Googling tomato soup recipes.
I didn’t particularly like any of the ones I found on the net, so instead I dusted off my very old Delia Smith recipe book which is falling apart at the spine, and used her wonderful recipe for tomato soup as the basis for mine with embellishments.
Easy peasy. Full of fresh nutrients and no nasty chemicals. Way to go.

Best Tomato Soup Recipe
Ingredients (Serves 4)
- One medium large potato, chopped into small cubes
- One large onion, chopped into small slices
- 2 cloves of garlic, crushed
- 1kg cherry or plum tomatoes (whole and not de-skinned)
- Small handful of fresh basil chopped roughly
- Small handful of the best parmesan cheese you can buy, grated.
- 500ml vegetable stock (if you like a runnier soup you can add more stock at the end)
- About a tablespoon of olive oil
- Natural yoghurt to garnish (optional)
Method
Over gentle heat fry the potato and onion until soft. Takes about 15 – 20 minutes over low heat. Don’t let it brown.
Add tomatoes and let them cook for about 3 – 5 minutes
Add the crushed garlic and give a good stir for a minute.
Add the stock.
Bring the mixture to the boil.
Turn the heat down and simmer (covered) for 20 to 25 minutes until the tomatoes are lovely and gooey.
Let it all cool.
Add mixture to a Nutri-Bullet blender and Whizz-up!
Return to pan and heat gently.
Add half the basil.
Spoon into bowls.
Garnish with a little fresh basil, yoghurt and parmesan cheese.
Serve with sourdough toast or crusty French bread.
